1.Ā Prepare the Cod
Pat the cod fillets dry with paper towels.
Season both sides withĀ saltĀ andĀ black pepper.
2.Ā Sear the Cod
HeatĀ 1 tablespoon olive oilĀ in a large skillet over medium-high heat.
Add cod fillets and cook forĀ 2ā3 minutes per side, until lightly golden and just cooked through.
Transfer cod to a plate and cover loosely with foil.
3.Ā Make the Tomato Basil Sauce
In the same skillet, add remainingĀ 1 tablespoon olive oil.
Add theĀ onionĀ and sautĆ© forĀ 3ā4 minutesĀ until softened.
Stir in theĀ garlicĀ and cook for 30 seconds.
Add theĀ cherry tomatoesĀ and optionalĀ red pepper flakes. Cook forĀ 5ā6 minutes, stirring occasionally, until the tomatoes begin to break down.
Pour in theĀ broth or white wine, stir, and simmer for anotherĀ 3 minutesĀ to let flavors combine.
