Cook the Sausage:
Brown the ground sausage in a skillet over medium heat, breaking it apart as it cooks. Once done, transfer it to a large bowl and let it cool a bit.
Make the Filling:
Add the cheddar cheese, green onions, Parmesan, chopped spinach, and sun-dried tomatoes to the sausage. Season with black pepper and stir until well mixed.
Prep the Oven:
Heat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Fill the Wontons:
Place about 1 teaspoon of filling in the center of each wonton wrapper. Lightly wet the edges with water, fold into a triangle, and press the edges to seal.
Bake:
Arrange the filled wontons on the baking sheet, brush with olive oil or melted butter, and bake for 12–15 minutes or until crisp and golden.
